Ingredients

- 1 cup quinoa
- 2 cups water
- 2 beaten eggs
- 1 cup shredded mozzarella cheese (or vegan cheese)
- 2 teaspoons garlic powder
- Italian herbs (oregano or basil)
- Salt to taste
Instructions
- Rinse the quinoa under cool water to remove the bitter coating.
- Cook the quinoa in 2 cups of water; bring to a boil, then cover and simmer for 15 minutes until fluffy.
- Preheat the oven to 425°F (220°C).
- In a bowl, mix the cooked quinoa with eggs, cheese, garlic powder, and herbs until well combined.
- Spread the mixture onto a parchment-lined baking sheet, shaping it into a round or rectangular crust about half an inch thick.
- Bake for 15-20 minutes until golden brown and crispy around the edges.
- Add desired toppings and return to the oven for another 10 minutes until cheese is bubbly.
- Let cool for a few minutes, then slice and serve.
Notes
You can add finely chopped veggies to the crust for extra flavor and nutrition.
