Description

A healthy and tasty crust made from quinoa, perfect for holding all your favorite toppings.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 beaten eggs
  • 1 cup shredded mozzarella cheese (or vegan cheese)
  • 2 teaspoons garlic powder
  • Italian herbs (oregano or basil)
  • Salt to taste

Instructions

  1. Rinse the quinoa under cool water to remove the bitter coating.
  2. Cook the quinoa in 2 cups of water; bring to a boil, then cover and simmer for 15 minutes until fluffy.
  3. Preheat the oven to 425°F (220°C).
  4. In a bowl, mix the cooked quinoa with eggs, cheese, garlic powder, and herbs until well combined.
  5. Spread the mixture onto a parchment-lined baking sheet, shaping it into a round or rectangular crust about half an inch thick.
  6. Bake for 15-20 minutes until golden brown and crispy around the edges.
  7. Add desired toppings and return to the oven for another 10 minutes until cheese is bubbly.
  8. Let cool for a few minutes, then slice and serve.

Notes

You can add finely chopped veggies to the crust for extra flavor and nutrition.
