- 1 cup unsalted butter, softened
- ½ cup sugar
- 2 cups all-purpose flour
- Pinch of salt
- 2 cups fresh raspberries
- 1 cup lemon juice (about 4–6 lemons)
- 1 cup sugar
- 3 large eggs
- ¼ cup all-purpose flour
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
- Make the crust: In a medium bowl, blend the softened butter, sugar, and flour until crumbly. Press evenly onto the bottom of the dish and bake for 20 minutes or until lightly golden.
- Prepare the filling: In a separate bowl, whisk together raspberries, lemon juice, sugar, eggs, and flour until combined.
- Pour the filling over the hot crust and return to the oven for another 25-30 minutes, until set and slightly firm.
- Allow to cool on a wire rack, then dust with powdered sugar and cut into squares.
- Chill in the refrigerator for an hour before serving for better flavor and easier slicing.
Notes
For the best results, avoid overbaking and let the bars cool completely before slicing.
