Description

Delicious Raspberry Lemon Bars with a buttery crust and zesty lemon filling, perfect for summer gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup sugar
  • 2 cups all-purpose flour
  • Pinch of salt
  • 2 cups fresh raspberries
  • 1 cup lemon juice (about 46 lemons)
  • 1 cup sugar
  • 3 large eggs
  • ¼ cup all-purpose flour
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper.
  2. Make the crust: In a medium bowl, blend the softened butter, sugar, and flour until crumbly. Press evenly onto the bottom of the dish and bake for 20 minutes or until lightly golden.
  3. Prepare the filling: In a separate bowl, whisk together raspberries, lemon juice, sugar, eggs, and flour until combined.
  4. Pour the filling over the hot crust and return to the oven for another 25-30 minutes, until set and slightly firm.
  5. Allow to cool on a wire rack, then dust with powdered sugar and cut into squares.
  6. Chill in the refrigerator for an hour before serving for better flavor and easier slicing.
