- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- A pinch of salt
- 1 cup granulated sugar (for filling)
- 1/4 cup all-purpose flour (for filling)
- 2 large eggs
- Zest and juice of 2 lemons
- 1 cup fresh raspberries
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- Cream together 1 cup of softened unsalted butter and 1/2 cup of granulated sugar until light and fluffy. Gradually add 2 cups of flour and a pinch of salt, then press into the prepared pan.
- Bake for 15-20 minutes until lightly golden brown.
- In a bowl, whisk together 1 cup of sugar, 1/4 cup of flour, and 2 eggs. Stir in lemon zest and juice, then gently fold in the raspberries.
- Pour the filling over the baked crust and bake for another 20-25 minutes until set with a slight jiggle in the center.
- Allow to cool, then refrigerate for at least 2 hours. Dust with powdered sugar and cut into squares before serving.
Notes
Serve chilled or at room temperature, and consider adding whipped cream or vanilla ice cream on the side.
