Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup buttermilk
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese
  • 1/4 cup sugar (for cheesecake)
  • 1 egg (for cheesecake)
  • 1 teaspoon vanilla extract (for cheesecake)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, melt the unsalted butter and let it cool slightly. Add the granulated sugar and brown sugar, mixing until well-combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Sift together the all-purpose flour, cocoa powder, and a pinch of salt. Gradually fold the dry mixture into the wet until just combined.
  5. Slowly add the buttermilk and red food coloring, mixing gently until smooth.
  6. In another mixing bowl, beat the cream cheese until smooth. Add sugar, egg, and vanilla, blending until creamy.
  7. Pour half of the brownie batter into your prepared pan, dollop the cheesecake mixture on top, swirl gently, then pour the remaining brownie batter over it.
  8. Bake for 30-35 minutes. The brownies are done when a toothpick inserted comes out with a few moist crumbs.
  9. Cool in the pan for at least 20 minutes before serving.

Notes

For richer flavor, chill brownies in the fridge before slicing. Serve warm with vanilla ice cream or a drizzle of chocolate sauce.
