- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup buttermilk
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 8 oz cream cheese
- 1/4 cup sugar (for cheesecake)

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
- In a large mixing bowl, melt the unsalted butter and let it cool slightly. Add the granulated sugar and brown sugar, mixing until well-combined.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Sift together the all-purpose flour, cocoa powder, and a pinch of salt. Gradually fold the dry mixture into the wet until just combined.
- Slowly add the buttermilk and red food coloring, mixing gently until smooth.
- In another mixing bowl, beat the cream cheese until smooth. Add sugar, egg, and vanilla, blending until creamy.
- Pour half of the brownie batter into your prepared pan, dollop the cheesecake mixture on top, swirl gently, then pour the remaining brownie batter over it.
- Bake for 30-35 minutes. The brownies are done when a toothpick inserted comes out with a few moist crumbs.
- Cool in the pan for at least 20 minutes before serving.
Notes
For richer flavor, chill brownies in the fridge before slicing. Serve warm with vanilla ice cream or a drizzle of chocolate sauce.
