- 2 cups boneless chicken breasts, cubed
- 1 cup long-grain white rice
- 1 can condensed cream of chicken soup
- 1 cup chicken broth
- 1 cup sliced mushrooms
- 2 cloves minced garlic
- 1 sleeve Ritz crackers, crushed
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt 2 tablespoons of butter over medium heat and sauté 1 cup of sliced mushrooms and 2 minced garlic cloves for 4-5 minutes until golden brown.
- Add 2 cups of cubed chicken to the skillet. Season with salt and pepper, cooking until no longer pink, about 5-7 minutes.
- In a large mixing bowl, combine the chicken mixture, 1 can of cream of chicken soup, and 1 cup of chicken broth. Stir in 2 cups of uncooked rice until well coated.
- Pour the mixture into a greased 9×13 inch baking dish and spread evenly.
- Crush and sprinkle 1 sleeve of Ritz crackers on top and drizzle with melted butter.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until rice is tender and topping is golden brown.
- Let it sit for 10 minutes before serving.
Notes
For a lighter option, substitute cream soup with a homemade creamy sauce. Consider adding veggies like peas or broccoli for extra nutrition.
