Ingredients

  • 1 Butternut Squash, peeled and cubed
  • 1 lb Ground Turkey
  • 3 cloves Garlic, minced
  • 1 Onion, diced
  • 2 tbsp Olive Oil
  • Fresh herbs (rosemary or sage)
  • Salt and pepper to taste
  • Optional: pinch of cinnamon or nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash.
  3. Toss the cubed squash with olive oil, salt, and pepper.
  4. Spread the squash on a baking sheet and roast for about 25-30 minutes.
