- 1 lb lean ground turkey

- 2 cloves fresh garlic, minced
- 1 onion, chopped

- Fresh parsley or sage, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Peel, seed, and cut the butternut squash into bite-sized cubes.
- Toss the squash with olive oil, salt, and pepper in a large bowl until coated.
- Spread the squash evenly on a baking sheet.
- Roast the squash for about 25-30 minutes, stirring halfway through.
- While the squash is roasting, heat a skillet over medium heat and sauté the chopped onions for about 5 minutes until translucent.
- Add minced garlic to the skillet and sauté until fragrant.
- Add ground turkey to the skillet, browning it and seasoning with thyme, paprika, salt, and pepper.
- Once the turkey is cooked through, mix it with the roasted squash.
- Sprinkle fresh herbs over the mixture and toss before serving.
