  • 1 butternut squash, peeled and cubed
  • 1 lb lean ground turkey
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic, minced
  • 1 onion, chopped
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley or sage, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel, seed, and cut the butternut squash into bite-sized cubes.
  3. Toss the squash with olive oil, salt, and pepper in a large bowl until coated.
  4. Spread the squash evenly on a baking sheet.
  5. Roast the squash for about 25-30 minutes, stirring halfway through.
  6. While the squash is roasting, heat a skillet over medium heat and sauté the chopped onions for about 5 minutes until translucent.
  7. Add minced garlic to the skillet and sauté until fragrant.
  8. Add ground turkey to the skillet, browning it and seasoning with thyme, paprika, salt, and pepper.
  9. Once the turkey is cooked through, mix it with the roasted squash.
  10. Sprinkle fresh herbs over the mixture and toss before serving.
