Description

Ingredients

  • Cheese tortellini (fresh or frozen)
  • Roasted red peppers
  • Parmesan cheese (grated or shaved)
  • Fresh garlic (minced)
  • Olive oil
  • Fresh herbs (basil and parsley)
  • Lemon juice (freshly squeezed)
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 425°F (220°C) and roast the red peppers for 25-30 minutes, then steam and peel.
  2. Cook the tortellini according to package instructions until al dente, then drain and rinse.
