- 200g dark chocolate (bittersweet)
- 150g unsalted butter (softened)
- 200g granulated sugar
- 4 large eggs (room temperature)
- 100g all-purpose flour
- 200g apricot jam
- 150g chocolate ganache (made from chocolate and heavy cream)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- Melt the chocolate gently in a double boiler or microwave, allowing it to cool slightly.
- Cream the butter and sugar together until fluffy.
- Add the eggs one at a time, beating thoroughly after each addition, then mix in the melted chocolate.
- Sift the flour into the mixture and gently fold it in.
- Pour the batter into the prepared pan and bake for about 40 minutes.
- Cool the cake in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
- Slice the cake in half horizontally and spread apricot jam in the middle, then replace the top layer.
- Prepare the ganache by heating heavy cream and pouring it over chopped chocolate. Stir until smooth.
- Pour the ganache over the assembled cake.
