Ingredients

- 2 skin-on salmon fillets
- Juice and zest of 1 lemon
- Juice and zest of 1 orange
- 2 tablespoons unsalted butter
- 2 cloves garlic, sliced
- Fresh dill or parsley, for garnish
- Salt and pepper, to taste
- Optional: thinly sliced zucchini or bell peppers
Instructions
- Preheat your oven to 400°F (200°C).
- Lay out large sheets of parchment paper.
- Place a salmon fillet in the center of each sheet and season with salt and pepper.
- Squeeze lemon and orange juice over the fillet, sprinkle with zest, and add a pat of butter, sliced garlic, and fresh herbs.
- Fold the parchment tightly over the salmon to seal in flavors.
- Place the packets on a baking sheet and bake for 12-15 minutes until the salmon is opaque.
- Let packets sit a few minutes before opening, then serve, garnishing with additional herbs.
Notes
Opt for fresh, wild-caught salmon for the best flavor. Don’t overcrowd the parchment to let the salmon shine. Lightly sauté mushrooms like shiitake or cremini to add before sealing for extra flavor.
