Description

A delightful dish featuring salmon baked in parchment with a zesty citrus butter, fresh herbs, and aromatic garlic.


Ingredients

  • 2 skin-on salmon fillets
  • Juice and zest of 1 lemon
  • Juice and zest of 1 orange
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, sliced
  • Fresh dill or parsley, for garnish
  • Salt and pepper, to taste
  • Optional: thinly sliced zucchini or bell peppers

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay out large sheets of parchment paper.
  3. Place a salmon fillet in the center of each sheet and season with salt and pepper.
  4. Squeeze lemon and orange juice over the fillet, sprinkle with zest, and add a pat of butter, sliced garlic, and fresh herbs.
  5. Fold the parchment tightly over the salmon to seal in flavors.
  6. Place the packets on a baking sheet and bake for 12-15 minutes until the salmon is opaque.
  7. Let packets sit a few minutes before opening, then serve, garnishing with additional herbs.

Notes
