Ingredients

- 2 skin-on salmon fillets
- Juice and zest of 1 lemon
- Juice and zest of 1 orange
- 2 tablespoons unsalted butter
- 2 cloves fresh garlic, minced
- Fresh herbs (dill, parsley, or thyme)
- Salt and pepper to taste
- Optional vegetables (asparagus, bell peppers, cherry tomatoes)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut a large rectangle of parchment paper, about 15 inches long, and fold it in half.
- On one side of the parchment, place the salmon fillet. Squeeze lemon and orange juice over it, add a pat of butter, minced garlic, herbs, salt, and pepper. Layer any optional veggies around the salmon.
- Fold the other side of the parchment over the salmon, and seal tightly by making overlapping pleats along the edges.
- Place the packets on a baking sheet and bake for 12-15 minutes.
- Carefully cut open each packet, serve the salmon on a plate, and pour any juices over it. Garnish with extra herbs or citrus slices.
Notes
If doubling the recipe, serve family-style in parchment packets for a delightful presentation.
