- 1 cup almond flour
- 1 cup powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- Food coloring (red and green)
- Your choice of filling (peppermint buttercream, chocolate ganache, spiced cream cheese frosting, etc.)
Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a clean mixing bowl, whisk the egg whites until foamy, gradually adding granulated sugar until stiff peaks form.
- Sift almond flour and powdered sugar together to eliminate clumps.
- Gently fold the sifted dry ingredients into the meringue, being careful not to deflate the batter.
- Add food coloring to reach desired hue.
- Pipe small rounds onto prepared baking sheets and let them rest for 20-30 minutes to form a crust.
- Bake for 15-20 minutes until dry to the touch.
- Cool completely, then fill and sandwich similar-sized shells.
- Allow filled macarons to rest in the fridge for at least a day before serving.
Notes
Room temperature eggs yield the best results; sift dry ingredients to avoid lumps.
