Description

A delightful baked dip featuring ripe tomatoes, fresh basil, and gooey melted cheese that brings warmth and nostalgia to any gathering.


Ingredients

  • 4 ripe tomatoes (preferably Roma or vine-ripened), diced
  • 1/2 cup fresh basil, torn
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 baguette, sliced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Dice the tomatoes and mix with olive oil, salt, and pepper.
  3. Sauté garlic in a skillet with olive oil for 1-2 minutes until fragrant.
  4. In a bowl, combine cream cheese and half of the mozzarella, fold in sautéed garlic, tomatoes, and basil.
  5. Spoon the mixture into a greased baking dish and top with remaining mozzarella.
  6. Bake for 20-25 minutes until bubbly and golden.
  7. Allow to cool slightly before serving with baguette slices.

Notes

For a richer flavor, replace half of the mozzarella with a sharper cheese. Avoid using canned tomatoes for best results.
