- 4 ripe tomatoes (preferably Roma or vine-ripened), diced
- 1/2 cup fresh basil, torn
- 3 cloves garlic, minced
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 baguette, sliced
Instructions
- Preheat your oven to 350°F (175°C).
- Dice the tomatoes and mix with olive oil, salt, and pepper.
- Sauté garlic in a skillet with olive oil for 1-2 minutes until fragrant.
- In a bowl, combine cream cheese and half of the mozzarella, fold in sautéed garlic, tomatoes, and basil.
- Spoon the mixture into a greased baking dish and top with remaining mozzarella.
- Bake for 20-25 minutes until bubbly and golden.
- Allow to cool slightly before serving with baguette slices.
Notes
For a richer flavor, replace half of the mozzarella with a sharper cheese. Avoid using canned tomatoes for best results.
