- 4 cups fresh corn (or frozen corn, thawed and drained)
- 1 cup sharp cheddar cheese, shredded
- 3 large eggs
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 cup fresh herbs (thyme, chives, or dill)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
- In a large bowl, combine fresh corn, cheddar cheese, and herbs.
- In another bowl, whisk together eggs, milk, cream, cornmeal, salt, pepper, and nutmeg until fluffy.
- Pour the wet mixture over the corn mixture and fold gently until combined.
- Transfer to the greased baking dish, sprinkle additional cheese on top, and bake for 45-50 minutes until golden brown.
- Let it cool for a few minutes before serving.
