Ingredients
- Chicken thighs or breasts (skinless, boneless)
- Brown sugar
- Fresh pineapple (chunks)
- Soy sauce
- Fresh garlic (minced)
- Onion (diced)

- Pineapple juice (preferably freshly squeezed)
Instructions
- In a large bowl, mix equal parts brown sugar and soy sauce, then add minced garlic and diced onions. Toss the chicken in this mixture, and let it marinate for at least 30 minutes (or overnight).
- Preheat the oven to 375°F (190°C). Heat a skillet over medium-high heat and sear the marinated chicken for about 4-5 minutes on each side until golden brown.
- Transfer the chicken into an oven-safe dish, pour the remaining marinade over it, and add pineapple chunks on top.
- Bake for about 25-30 minutes, until the chicken is cooked through and the pineapple is caramelized.
