- 4 cups vegetable broth
- 2 medium tomatoes, diced
- 2 medium carrots, chopped
- 2 bell peppers, chopped
- 1 medium zucchini, chopped
- 1 cup leafy greens (kale or spinach)
- 1 cup mushrooms (cremini or shiitake), sliced
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- Salt and pepper to taste
- Pinch of red pepper flakes (optional)
- Olive oil for sautéing
Instructions
- Prep your ingredients by washing and chopping the vegetables into bite-sized pieces, and mincing the garlic and onion.
- In a large pot, heat a drizzle of olive oil over medium heat and sauté the minced garlic and onion until fragrant, about 3-4 minutes.
- Add chopped carrots, bell peppers, and sliced mushrooms; sauté for an additional 5-6 minutes.
- Pour in the vegetable broth and diced tomatoes; stir and bring to a gentle boil.
- Once boiling, reduce heat to low and simmer for 20-30 minutes to allow flavors to meld.
- Just before serving, stir in the leafy greens and fresh herbs, adjusting the seasoning as necessary. Optionally, add a splash of lemon juice.
Notes
For a creamier texture, blend a portion of the soup and return it to the pot. Serve with crusty bread or Parmesan cheese for added flavor.
