  • 1 teaspoon fresh basil

  • 12 cups fresh spinach or kale, optional for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add chopped onions and sauté until golden.
  2. Add minced garlic and cook for an additional minute.
  3. Toss in diced carrots, celery, and bell peppers. Let them soften for about 5–7 minutes.
  4. Add sliced mushrooms and cook until tender.
  5. Incorporate diced tomatoes and their juice, mixing well.
  6. Pour in vegetable broth and bring to a gentle simmer.
  7. Season generously with salt, pepper, and fresh herbs.
  8. Allow the soup to simmer gently for about 30-40 minutes.
  9. In the last few minutes, add fresh spinach or kale to wilt.
  10. Taste and adjust seasoning with a bit of lemon juice if desired.
  11. Serve garnished with fresh herbs and a drizzle of olive oil.
