Ingredients

- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 8 ounces cremini or shiitake mushrooms, sliced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 teaspoon fresh thyme
- 1 teaspoon fresh basil
- Salt and pepper to taste
- 1–2 cups fresh spinach or kale, optional for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add chopped onions and sauté until golden.
- Add minced garlic and cook for an additional minute.
- Toss in diced carrots, celery, and bell peppers. Let them soften for about 5–7 minutes.
- Add sliced mushrooms and cook until tender.
- Incorporate diced tomatoes and their juice, mixing well.
- Pour in vegetable broth and bring to a gentle simmer.
- Season generously with salt, pepper, and fresh herbs.
- Allow the soup to simmer gently for about 30-40 minutes.
- In the last few minutes, add fresh spinach or kale to wilt.
- Taste and adjust seasoning with a bit of lemon juice if desired.
- Serve garnished with fresh herbs and a drizzle of olive oil.
Notes
Feel free to add beans or lentils for additional protein, or modify with your favorite seasonal vegetables.
