- 4 medium-sized sweet potatoes
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt, to taste
- Pepper, to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add the ground turkey and cook until browned, seasoning with salt, pepper, thyme, and parsley.
- Mix in cheese if desired, allowing it to melt into the turkey mixture.
- Slice the baked sweet potatoes and fluff the insides. Spoon the turkey mixture into each potato.
- Sprinkle additional cheese on top and bake again for 10-15 minutes.
- Garnish with herbs or Greek yogurt before serving.
Notes
For substitutions, ground chicken or beef can be used instead of turkey. Vegetarian options include crumbled tempeh or black beans.
