Ingredients

  • 4 medium-sized sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt, to taste
  • Pepper, to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  4. Add the ground turkey and cook until browned, seasoning with salt, pepper, thyme, and parsley.
  5. Mix in cheese if desired, allowing it to melt into the turkey mixture.
  6. Slice the baked sweet potatoes and fluff the insides. Spoon the turkey mixture into each potato.
