- 1 lb shrimp, peeled and deveined
- 1 cup Monterey Jack cheese, shredded
- 1 cup cheddar cheese, shredded
- 4 large flour tortillas
- 1 cup sautéed onions
- 1 cup sautéed bell peppers
- 1 tsp garlic powder
- 1 tsp chili powder
- Fresh cilantro, for garnish
- Olive oil, for cooking
- Salt and pepper, to taste
Instructions
- Prep your ingredients: Rinse and dry the shrimp, season with salt, pepper, and spices. Chop vegetables.
- Sauté the shrimp in a skillet with olive oil for 2–3 minutes until pink. Set aside.
- In the same skillet, sauté onions and bell peppers until softened, about 4–5 minutes. Add the shrimp back in and stir to combine.
- Build the quesadilla: In a skillet, lay a tortilla, sprinkle half with cheese, add shrimp and vegetable mixture, top with more cheese, and fold.
- Cook the quesadilla for 2–3 minutes on each side until golden brown and cheese melts. Cool slightly and slice into wedges.
Notes
Serve with salsa, guacamole, or a simple green salad for an elevated experience.
