Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 4 large flour tortillas
  • 1 cup sautéed onions
  • 1 cup sautéed bell peppers
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Fresh cilantro, for garnish
  • Olive oil, for cooking
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients: Rinse and dry the shrimp, season with salt, pepper, and spices. Chop vegetables.
  2. Sauté the shrimp in a skillet with olive oil for 2–3 minutes until pink. Set aside.
  3. In the same skillet, sauté onions and bell peppers until softened, about 4–5 minutes. Add the shrimp back in and stir to combine.
  4. Build the quesadilla: In a skillet, lay a tortilla, sprinkle half with cheese, add shrimp and vegetable mixture, top with more cheese, and fold.
  5. Cook the quesadilla for 2–3 minutes on each side until golden brown and cheese melts. Cool slightly and slice into wedges.
