- 1 lb shrimp, peeled and deveined
- 4 flour tortillas
- 1 cup Monterey Jack or sharp cheddar cheese, shredded
- 2 cloves garlic, minced
- 1 cup button or cremini mushrooms, sliced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Fresh cilantro or green onions, for garnish
- Olive oil, for cooking
- Lime wedges, for serving
Instructions
- Prep your ingredients: Finely chop garlic, mushrooms, and any greens.
- Sauté the shrimp in a skillet with olive oil and minced garlic for 3-4 minutes until pink and opaque, then set aside.
- In the same skillet, add sliced mushrooms and sauté them until golden brown, about 5-7 minutes.
- Assemble the quesadilla: On one half of a tortilla, sprinkle cheese, add shrimp and mushrooms, then top with more cheese. Fold the tortilla.
- Cook the quesadilla in the skillet for 3-4 minutes on each side until golden and crispy.
- Serve warm with salsa, guacamole, and lime wedges.
Notes
For extra flavor, consider grilling the tortillas or adding smoked paprika to the shrimp.
