Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 flour tortillas
  • 1 cup Monterey Jack or sharp cheddar cheese, shredded
  • 2 cloves garlic, minced
  • 1 cup button or cremini mushrooms, sliced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Fresh cilantro or green onions, for garnish
  • Olive oil, for cooking
  • Lime wedges, for serving

Instructions

  1. Prep your ingredients: Finely chop garlic, mushrooms, and any greens.
  2. Sauté the shrimp in a skillet with olive oil and minced garlic for 3-4 minutes until pink and opaque, then set aside.
  3. In the same skillet, add sliced mushrooms and sauté them until golden brown, about 5-7 minutes.
  4. Assemble the quesadilla: On one half of a tortilla, sprinkle cheese, add shrimp and mushrooms, then top with more cheese. Fold the tortilla.
  5. Cook the quesadilla in the skillet for 3-4 minutes on each side until golden and crispy.
  6. Serve warm with salsa, guacamole, and lime wedges.

Notes

For extra flavor, consider grilling the tortillas or adding smoked paprika to the shrimp.
