Ingredients
Scale
- 2 pounds beef (chuck or stew meat), cut into bite-sized pieces
- 6 cloves garlic, minced
- 1/2 cup butter
- 2 pounds potatoes (Yukon Gold or Red), peeled and chopped
- 2 tablespoons fresh herbs (thyme or rosemary), chopped
- 1 cup beef or vegetable broth
- 1 onion, chopped
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Cut the beef into bite-sized pieces and peel the potatoes. Toss them in a bowl with salt and pepper.

- Brown the Beef: Add a little oil if needed to the skillet and brown the beef on all sides.
- Combine Ingredients: In the slow cooker, add the browned beef, sautéed garlic, chopped potatoes, onion, and herbs. Pour in the broth.
- Cooking Time: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Final Touches: About 30 minutes before serving, melt the remaining butter and mix with more garlic and herbs. Drizzle over the dish.
- Serve: Ladle into bowls and garnish with fresh herbs before enjoying.
Notes
For a lighter version, substitute half the butter with olive oil. Fresh garlic is preferred over garlic powder for maximum flavor.
