Description

  • 6 cloves garlic, minced
  • 1/2 cup butter
  • 2 pounds potatoes (Yukon Gold or Red), peeled and chopped
  • 2 tablespoons fresh herbs (thyme or rosemary), chopped
  • 1 cup beef or vegetable broth
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Cut the beef into bite-sized pieces and peel the potatoes. Toss them in a bowl with salt and pepper.
  2. Sauté the Garlic: In a skillet over medium heat, melt half the butter and add the minced garlic. Sauté until fragrant, about 1 minute.
  3. Brown the Beef: Add a little oil if needed to the skillet and brown the beef on all sides.
  4. Combine Ingredients: In the slow cooker, add the browned beef, sautéed garlic, chopped potatoes, onion, and herbs. Pour in the broth.
  5. Cooking Time: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Final Touches: About 30 minutes before serving, melt the remaining butter and mix with more garlic and herbs. Drizzle over the dish.
  7. Serve: Ladle into bowls and garnish with fresh herbs before enjoying.

Notes

For a lighter version, substitute half the butter with olive oil. Fresh garlic is preferred over garlic powder for maximum flavor.
