Instructions
- Prepare the Ingredients: Peel and halve baby potatoes. Chop beef into large chunks and season with salt and pepper.
- Sear the Beef: In a hot skillet, melt butter and brown beef chunks on all sides.
- Layer in the Slow Cooker: Place potatoes at the bottom, add beef on top, drizzle with melted garlic butter, and sprinkle with herbs.
- Add Broth and Cook: Pour beef broth over the mixture and cook on low for 6-8 hours or high for 4-5 hours.
- Finish and Serve: Taste and adjust seasoning; beef should be fork-tender and potatoes creamy.
