- 1 cup all-purpose or whole wheat flour
- 1 teaspoon baking powder
- 2 eggs
- 1 cup milk (whole or buttermilk)
- 4 ounces high-quality smoked salmon
- 1/4 cup fresh dill, chopped
- 4 ounces cream cheese or crème fraîche
- Optional: capers and lemon zest for garnish
Instructions
- Prepare the blini batter: In a large mixing bowl, combine the flour, baking powder, and a pinch of salt. In another bowl, whisk together the eggs and milk. Gradually mix wet ingredients into dry ingredients until just combined.
- Cook the blinis: Heat a non-stick skillet over medium heat, lightly grease it, and pour small rounds of batter (about 2 tablespoons each). Flip when bubbles form and edges are golden brown. Cook until both sides are evenly brown.
- Assemble the cake: Once the blinis are cool, layer them on a serving platter, spreading a thin layer of cream cheese or crème fraîche on each blini. Top with slices of smoked salmon and a sprinkle of fresh dill.
- Chill and serve: Allow the assembled cake to chill for about 30 minutes in the fridge. Best served fresh or within a day.
Notes
For added flavor, garnish with microgreens or drizzle with dill-infused olive oil before serving. Make sure not to overmix the batter for light blinis.
