Description

A delightful blend of rich smoked salmon and fresh dill atop light and airy blinis, perfect for brunch or any family gathering.

Ingredients

Scale
  • 1 cup all-purpose or whole wheat flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 cup milk (whole or buttermilk)
  • 4 ounces high-quality smoked salmon
  • 1/4 cup fresh dill, chopped
  • 4 ounces cream cheese or crème fraîche
  • Optional: capers and lemon zest for garnish

Instructions

  1. Prepare the blini batter: In a large mixing bowl, combine the flour, baking powder, and a pinch of salt. In another bowl, whisk together the eggs and milk. Gradually mix wet ingredients into dry ingredients until just combined.
  2. Cook the blinis: Heat a non-stick skillet over medium heat, lightly grease it, and pour small rounds of batter (about 2 tablespoons each). Flip when bubbles form and edges are golden brown. Cook until both sides are evenly brown.
  3. Assemble the cake: Once the blinis are cool, layer them on a serving platter, spreading a thin layer of cream cheese or crème fraîche on each blini. Top with slices of smoked salmon and a sprinkle of fresh dill.
  4. Chill and serve: Allow the assembled cake to chill for about 30 minutes in the fridge. Best served fresh or within a day.

Notes

For added flavor, garnish with microgreens or drizzle with dill-infused olive oil before serving. Make sure not to overmix the batter for light blinis.
