Description

A delightful layered cake of blinis, smoked salmon, and fresh dill, perfect for gatherings and celebrations.


Ingredients

  • 1 cup all-purpose flour (or whole wheat flour for substitution)
  • 2 eggs (or flax eggs/applesauce for vegan)
  • 1 cup whole milk (or almond/oat milk for dairy-free)
  • 1 teaspoon baking powder
  • Smoked salmon
  • Fresh dill (or tarragon/chives for substitution)
  • Butter for cooking
  • Crème fraîche for layering

Instructions

  1. In a bowl, whisk together flour, baking powder, and a pinch of salt. Make a well and add eggs and milk, whisking until smooth.
  2. Gently fold in chopped dill.
  3. Heat a non-stick skillet over medium heat and coat with butter. Scoop 1/4 cup of batter into the skillet for each blini.
  4. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2 minutes until golden brown. Repeat with remaining batter.
  5. On a serving platter, layer the blinis with smoked salmon, crème fraîche, and fresh dill until all components are used, garnishing with dill on top.
  6. Allow to rest before slicing and serve with lemon wedges.
