Ingredients

- 1 cup all-purpose flour (or whole wheat flour for substitution)
- 2 eggs (or flax eggs/applesauce for vegan)
- 1 cup whole milk (or almond/oat milk for dairy-free)
- 1 teaspoon baking powder
- Smoked salmon
- Fresh dill (or tarragon/chives for substitution)
- Butter for cooking
- Crème fraîche for layering
Instructions
- In a bowl, whisk together flour, baking powder, and a pinch of salt. Make a well and add eggs and milk, whisking until smooth.
- Gently fold in chopped dill.
- Heat a non-stick skillet over medium heat and coat with butter. Scoop 1/4 cup of batter into the skillet for each blini.
- Cook for 2-3 minutes until bubbles form, then flip and cook for another 2 minutes until golden brown. Repeat with remaining batter.
- On a serving platter, layer the blinis with smoked salmon, crème fraîche, and fresh dill until all components are used, garnishing with dill on top.
- Allow to rest before slicing and serve with lemon wedges.
