- 3 cups bread flour
- 1 cup rolled oats
- 1 teaspoon salt
- 1 tablespoon honey
- 1/2 cup active sourdough starter
- 1 1/2 cups lukewarm water
- Sea salt to taste
Instructions
- Prepare the Starter: Remove the sourdough starter from the fridge 4-6 hours before baking and feed it with equal parts flour and water until bubbly.
- Mix the Dough: In a bowl, combine flour, oats, salt, and honey. Gradually add water and sourdough starter, mixing until no dry flour remains. Cover and rest for 30 minutes.
- Knead: Turn dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
- First Rise: Place dough in a greased bowl, cover, and let rise for 4-8 hours until doubled in size.
- Shape the Loaf: Deflate the dough and shape into a loaf.
- Second Rise: Place shaped dough on parchment paper in a bowl lined with a cloth, cover, and let rise for 1-2 hours.
- Preheat Oven: Preheat your oven to 450°F (230°C) with a Dutch oven inside.
- Score and Bake: Transfer the dough to the pot, score the top, cover, and bake for 30 minutes. Remove lid and bake for 15-20 minutes until golden brown.
- Cool and Enjoy: Let the bread cool completely on a rack before slicing.
