Ingredients
Scale
- Ground lamb
- 1 medium onion
- 2 cloves garlic, minced
- 1 inch piece of ginger, minced
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garam masala
- 1/2 tsp cayenne pepper
- Salt to taste
- Fresh cilantro or mint, chopped
- Samosa wrappers
- Mango chutney
Instructions
- In a skillet, heat a tablespoon of oil over medium heat. Add chopped onions and cook until soft and golden.
- Stir in minced garlic and ginger, cooking for an additional minute until fragrant. Add ground lamb and cook until browned.
- Sprinkle in cumin, coriander, garam masala, cayenne, and salt. Mix well and simmer to let the flavors meld, then stir in fresh herbs.
- If making your own wrappers, combine flour, a pinch of salt, and warm water to form a dough. Knead until smooth and let it rest for 30 minutes.
- Cut your dough into circles. Add a spoonful of lamb mixture to the center, fold and seal the edges with water.
- Heat oil in a deep pan and fry the samosas until golden and crisp, turning occasionally. Remove and drain on paper towels.
- Serve with mango chutney.
Notes
You can make the filling ahead of time, and assemble the samosas later. Consider serving with a cucumber raita or mixed greens.
