- 12 manicotti shells
- 15 oz ricotta cheese
- 2 cups fresh spinach, wilted
- 1 cup grated Parmesan cheese
- 3 cups marinara sauce
- 1 large egg, beaten
- 1 tablespoon fresh basil or parsley, chopped
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the manicotti shells according to package instructions until al dente, then drain.
- In a skillet, heat olive oil and sauté garlic until fragrant. Add fresh spinach and cook until wilted, then remove from heat.
- In a bowl, mix ricotta cheese, wilted spinach, Parmesan cheese, beaten egg, and herbs. Season with salt and pepper.
- Stuff each manicotti shell generously with the spinach-ricotta mixture.
- Spread some marinara sauce in a baking dish, place the stuffed shells seam side up, and cover with the remaining sauce and Parmesan.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until bubbly.
- Let it cool for a few minutes before serving.
Notes
Letting the dish rest after baking helps the flavors meld together.
