Description

Delightful mini cheesecake bites topped with fresh strawberries, perfect for any occasion.


Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 1 tablespoon granulated sugar
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries for topping

Instructions

  1. In a mixing bowl, combine crushed graham crackers with melted butter and granulated sugar. Press into the bottom of a mini muffin tin to form crusts.
  2. In a separate bowl, beat cream cheese, sour cream, powdered sugar, and vanilla until smooth.
  3. Spoon the cheesecake mixture into the prepared crusts, filling them about three-quarters full.
  4. Bake at 350°F (175°C) for 15-20 minutes until edges are set. Cool on a wire rack and refrigerate.
  5. Top each chilled bite with fresh strawberries or strawberry compote.
  6. Serve and enjoy!

Notes
