Ingredients

- 1 cup crushed graham crackers
- 1/4 cup melted butter
- 1 tablespoon granulated sugar
- 8 oz full-fat cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Fresh strawberries for topping
Instructions
- In a mixing bowl, combine crushed graham crackers with melted butter and granulated sugar. Press into the bottom of a mini muffin tin to form crusts.
- In a separate bowl, beat cream cheese, sour cream, powdered sugar, and vanilla until smooth.
- Spoon the cheesecake mixture into the prepared crusts, filling them about three-quarters full.
- Bake at 350°F (175°C) for 15-20 minutes until edges are set. Cool on a wire rack and refrigerate.
- Top each chilled bite with fresh strawberries or strawberry compote.
- Serve and enjoy!
Notes
Make sure cream cheese and sour cream are at room temperature for a smooth texture. Store leftovers in an airtight container in the refrigerator for up to five days.
