- 1 package sugar cookie dough
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup sour cream or Greek yogurt
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the sugar cookie dough with a pinch of salt. Press into the bottom of a greased 9-inch springform pan and bake for 10–12 minutes until lightly golden. Allow to cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually mix in the sugar, then add the eggs one at a time. Stir in the sour cream and vanilla extract.
- Pour the cheesecake filling over the cooled crust and smooth the top. Bake for 50–60 minutes until edges are firm but center jiggles slightly.
- Turn off the oven and leave the cheesecake inside for one hour, then refrigerate for at least four hours or overnight.
- Serve chilled, optionally topped with powdered sugar or fruit compote.

Ensure all ingredients are at room temperature for easy blending. Avoid opening the oven door while baking to maintain temperature.
