Description

A delightful stuffed chicken dish filled with sundried tomatoes, fresh spinach, and creamy cheese, perfect for family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup oil-packed sundried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 8 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Add fresh spinach and sundried tomatoes to the skillet, sautéing until the spinach wilts (3-4 minutes). Remove from heat and let cool.
  4. In a bowl, mix softened cream cheese with the sautéed filling. Season with salt, pepper, and Italian herbs.
  5. Carefully slice a pocket in each chicken breast, then fill each with the cheese mixture.
  6. Use toothpicks or kitchen twine to seal the opening of each chicken breast.
  7. In the skillet, add another tablespoon of olive oil and sear the stuffed chicken for 4-5 minutes on each side until golden brown.
  8. Transfer the chicken to a baking dish and bake for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
  9. Let rest for a few minutes before slicing and serve hot.

Notes

Serve with garlic-roasted vegetables or a fresh garden salad for a complete meal.
