- 4 boneless, skinless chicken breasts
- 1 cup oil-packed sundried tomatoes, chopped
- 2 cups fresh baby spinach
- 8 oz cream cheese, softened
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Add fresh spinach and sundried tomatoes to the skillet, sautéing until the spinach wilts (3-4 minutes). Remove from heat and let cool.
- In a bowl, mix softened cream cheese with the sautéed filling. Season with salt, pepper, and Italian herbs.
- Carefully slice a pocket in each chicken breast, then fill each with the cheese mixture.
- Use toothpicks or kitchen twine to seal the opening of each chicken breast.
- In the skillet, add another tablespoon of olive oil and sear the stuffed chicken for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before slicing and serve hot.
Notes
