Description

Ingredients

  • 3 medium sweet potatoes
  • 1/2 cup unsalted butter, softened
  • 1.5 cups all-purpose flour
  • 1/2 cup granulated sugar (or brown sugar/maple syrup/honey)
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake for about 45-60 minutes until tender. Allow to cool and scoop the flesh into a mixing bowl.
  2. In a medium bowl, combine flour, sugar, and salt. Cut in softened butter until resembling coarse crumbs. Press into a greased baking dish and bake for about 10 minutes until lightly golden.
  3. In the same bowl, mix sweet potato flesh with eggs, sugar, cinnamon, nutmeg, and vanilla until smooth.
  4. Pour the sweet potato mixture over the pre-baked crust, spreading evenly. Bake for an additional 30-35 minutes until filling is set.
  5. Remove from oven and let cool completely before cutting into squares. Dust with powdered sugar if desired.

Notes

For a gluten-free option, substitute all-purpose flour with almond or pecan flour. Canned sweet potato puree can be used in a pinch, but fresh is recommended for flavor.
