- 3 medium sweet potatoes
- 1/2 cup unsalted butter, softened
- 1.5 cups all-purpose flour
- 1/2 cup granulated sugar (or brown sugar/maple syrup/honey)
- 2 large eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake for about 45-60 minutes until tender. Allow to cool and scoop the flesh into a mixing bowl.
- In a medium bowl, combine flour, sugar, and salt. Cut in softened butter until resembling coarse crumbs. Press into a greased baking dish and bake for about 10 minutes until lightly golden.
- In the same bowl, mix sweet potato flesh with eggs, sugar, cinnamon, nutmeg, and vanilla until smooth.
- Pour the sweet potato mixture over the pre-baked crust, spreading evenly. Bake for an additional 30-35 minutes until filling is set.
- Remove from oven and let cool completely before cutting into squares. Dust with powdered sugar if desired.
Notes
For a gluten-free option, substitute all-purpose flour with almond or pecan flour. Canned sweet potato puree can be used in a pinch, but fresh is recommended for flavor.
