Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Food coloring (gel)
  • Optional mix-ins: chocolate chips or crushed nuts

Instructions

  1. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla and almond extracts.
  2. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this to the creamed mixture until just combined.
  3. Divide the dough into two portions. Color one half red and the other green using gel food coloring, kneading until well combined.
  4. Roll out each portion of dough into rectangular shapes, about ¼ inch thick.
  5. Layer one color on top of the other and roll them together tightly to create a log. Wrap in plastic wrap and refrigerate for at least an hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Slice the chilled log into ¼ inch thick rounds and place them on the baking sheet.
  8. Bake for 8-10 minutes, until edges are lightly golden. Let cool before transferring to wire racks.

Notes

Store cookies in an airtight container for up to a week. Can be frozen for up to three months.
