- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 3/4 cups all-purpose flour
- 2 tablespoons espresso powder
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 8 ounces mascarpone cheese
- pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and sugars until fluffy.
- Add eggs, one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, espresso powder, cocoa powder, and salt.
- Slowly combine the dry ingredients with the wet mixture.
- Gently fold in the mascarpone until well incorporated.
- Scoop the dough onto a parchment-lined baking sheet.
- Bake for 12-15 minutes until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack and dusting with cocoa powder.
- Enjoy with coffee or milk.
