Ingredients

- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 2 tablespoons espresso powder
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the softened butter with granulated and powdered sugars until light and fluffy (3-4 minutes).
- Add eggs one at a time and mix in vanilla extract until well combined.
- In a separate bowl, whisk together flour, espresso powder, cocoa powder and a pinch of salt. Gradually mix into wet ingredients until just combined.
- Scoop dough onto prepared baking sheets, 2 inches apart.
- Bake for 10-12 minutes until edges are set and centers are soft.
- Cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
