Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons espresso powder
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter with granulated and powdered sugars until light and fluffy (3-4 minutes).
  3. Add eggs one at a time and mix in vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, espresso powder, cocoa powder and a pinch of salt. Gradually mix into wet ingredients until just combined.
  5. Scoop dough onto prepared baking sheets, 2 inches apart.
  6. Bake for 10-12 minutes until edges are set and centers are soft.
  7. Cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
