Delicious and fluffy Vegan Ube Rolls made with vibrant purple ube. A delightful treat perfect for any occasion.

- 1 cup ube (purple yam) puree
- 3 cups all-purpose flour
- 2 tsp active dry yeast
- 1/4 cup granulated sugar
- 1 cup plant-based milk (almond, soy, or oat)
- 1 tsp salt
- 1/4 cup vegan butter, melted
- 1 tsp vanilla extract
Instructions
- In a mixing bowl, combine warm plant-based milk and active dry yeast. Let sit for 5 minutes until frothy.
- In a large mixing bowl, whisk together all-purpose flour, sugar, and salt.
- Add the yeast mixture, melted vegan butter, and vanilla extract to the dry ingredients. Mix in the ube puree until combined.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover with a towel, and let rise in a warm place for about 60 minutes or until doubled in size.
- Punch down the dough and roll it into a rectangle. Cut strips and shape into rolls.
- Place rolls in a greased baking dish, cover, and let rise for another 30 minutes. Preheat oven to 350°F (175°C).
- Bake for 25-30 minutes until golden brown and fragrant.
- Let cool slightly before serving. Optional: Add a pat of vegan butter on top.
Notes
For variations, incorporate cinnamon or nutmeg for an additional flavor layer. Store leftovers in an airtight container at room temperature for 2 days or refrigerate for a week.
