- 2 ¾ cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¾ cup molasses
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups powdered sugar (for icing)
- 2–3 tbsp milk (for icing)
- 1 tsp vanilla extract (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda, and salt.
- In a large bowl, beat together the butter, brown sugar, and molasses until fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture and stir until a dough forms.
- Shape the dough into small balls and place them on a lined baking sheet.
- Bake for 8-10 minutes until the edges are firm. Let them cool on a wire rack.
- For the icing, whisk powdered sugar with milk and vanilla until smooth. Drizzle over cooled cookies.
- Serve and enjoy!
Notes
For added fun, use cookie cutters to shape the dough before baking. Allowing cookies to cool before icing prevents the icing from melting.
