Description

A heartwarming stew that combines tender pork with creamy potatoes and vibrant winter spices for a comforting meal.


Ingredients

  • 2 lbs pork shoulder, cubed
  • 4 medium Yukon Gold or Russet potatoes, quartered
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup vegetable or chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp cooking oil
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients: Cube the pork and chop the vegetables.
  2. In a heavy-bottomed pot, heat oil over medium-high heat and sear the pork until golden brown. Remove and set aside.
  3. Sauté the onions, garlic, carrots, and celery in the drippings for 5–7 minutes until softened.
  4. Stir in thyme, rosemary, cinnamon, and nutmeg, allowing them to bloom.
  5. Add the pork back into the pot along with potatoes, tomato paste, and broth. Bring to a simmer, then reduce heat and cover.
  6. Let the stew simmer for 90 minutes, stirring occasionally.
  7. Taste and adjust seasoning before serving.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

For a thicker stew, mash some of the potatoes against the pot before serving. Store leftovers in an airtight container for up to three days.
