- 3 green onions, chopped
- 1/4 cup fresh parsley, chopped

- 2 lemons, juiced
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- Salt and pepper to taste
Instructions
- Wash and dry the vegetables thoroughly. Chop the romaine into bite-sized pieces, slice the peppers, and quarter the cherry tomatoes.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
- In a large salad bowl, combine the chopped veggies and drizzle the dressing over the top. Toss gently.
- Chill in the refrigerator for about 30 minutes to enhance the flavors.
- Garnish with fresh herbs before serving.
