- 4 skinless, boneless chicken breasts
- 1 cup Italian breadcrumbs (or panko for extra crunch)
- 2 cups marinara sauce
- 1 cup fresh mozzarella cheese, sliced or shredded
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning (basil, oregano, thyme)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry and season with salt, pepper, and Italian seasoning.
- In one bowl, place the breadcrumbs. In another bowl, crack an egg and whisk it. Dip each chicken breast into the egg, then coat generously in breadcrumbs.
- In a skillet, heat olive oil over medium-high. Sear the chicken for 3-4 minutes on each side until golden.
- Place the chicken in a baking dish. Pour marinara sauce over each piece, then sprinkle mozzarella and parmesan cheese on top.
- Bake for about 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.
- Let it sit for a few minutes, then garnish with fresh basil before serving.
Notes
To avoid a soggy coating, ensure the sauce is not overly watery. Broiling the cheese for the last two minutes creates a delightful caramelization.
