Description

A delightful balance of sweet, spicy, and savory flavors that brings families together around the dinner table.


Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp chili sauce (preferably Thai)
  • 1 tbsp honey or sugar
  • 2 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 2 scallions, sliced
  • Salt and pepper to taste
  • Cooked jasmine rice for serving

Instructions

  1. In a bowl, mix chili sauce, honey, garlic, and ginger. Coat chicken evenly and marinate for at least 30 minutes.
  2. Heat vegetable oil in a skillet over medium heat. Cook marinated chicken for 5-6 minutes on each side until golden brown and cooked through, reserving any leftover marinade.
  3. Remove chicken and in the same skillet, add reserved marinade and coconut milk, whisking until smooth.
  4. Return chicken to skillet and coat in sauce; simmer briefly to combine flavors. Adjust seasoning with salt and pepper.
  5. Serve over jasmine rice, garnished with scallions and bell peppers.
  6. For added flavor, sprinkle with sesame seeds and serve with lime wedges.

Notes

Feel free to substitute chicken with tofu or shrimp for a different twist. Add more vegetables for a healthier option.
