Ingredients

- 1 lb boneless chicken (breast or thighs)
- 1 cup coconut milk
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp chili sauce (preferably Thai)
- 1 tbsp honey or sugar
- 2 tbsp vegetable oil
- 1 bell pepper, sliced
- 2 scallions, sliced
- Salt and pepper to taste
- Cooked jasmine rice for serving
Instructions
- In a bowl, mix chili sauce, honey, garlic, and ginger. Coat chicken evenly and marinate for at least 30 minutes.
- Heat vegetable oil in a skillet over medium heat. Cook marinated chicken for 5-6 minutes on each side until golden brown and cooked through, reserving any leftover marinade.
- Remove chicken and in the same skillet, add reserved marinade and coconut milk, whisking until smooth.
- Return chicken to skillet and coat in sauce; simmer briefly to combine flavors. Adjust seasoning with salt and pepper.
- Serve over jasmine rice, garnished with scallions and bell peppers.
- For added flavor, sprinkle with sesame seeds and serve with lime wedges.
Notes
Feel free to substitute chicken with tofu or shrimp for a different twist. Add more vegetables for a healthier option.
