Instructions
- In a large soup pot over medium heat, add olive oil. Sauté diced onions, chopped celery, and bell peppers for 5-7 minutes until tender.
- Stir in minced garlic and cook for an additional minute, being careful not to burn it.
- Sprinkle in Cajun seasoning and mix for about a minute to enhance the fragrance.
- Add diced potatoes and broth, bring to a gentle boil. Cover and simmer until potatoes are fork-tender, about 15-20 minutes.
- If desired, blend mixture for a thicker consistency or mash some potatoes for texture.
- Lower heat, stir in cream, and adjust seasoning with salt and pepper as needed.
- Garnish with fresh parsley or green onions and serve hot with crusty bread.
