- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 cups fresh cranberries, chopped
- 1 cup white chocolate chips, divided
- 8 oz cream cheese, softened
- 1/4 cup confectioners’ sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13-inch baking dish with parchment paper.
- Cream together butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Fold in flour and salt until just combined.
- Incorporate cranberries and half of the white chocolate chips.
- Spread mixture into the prepared pan and bake for about 25-30 minutes until a toothpick comes out clean.
- Let cool completely in the pan.
- Beat together cream cheese, butter, and confectioners’ sugar until creamy; add vanilla extract.
- Spread frosting evenly over cooled bars and sprinkle remaining white chocolate chips on top.
- Chill in the refrigerator for about an hour before cutting into squares.
