  • 1/2 cup freshly grated Parmesan cheese
  • Fresh herbs (thyme, parsley, or rosemary)

Instructions

  1. Cook Your Pasta: Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve a cup of pasta water before draining.
  2. Caramelize Your Onions: In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add sliced onions and cook, stirring occasionally, for about 20-30 minutes until golden brown and sweet.
  3. Add Garlic: Once onions are caramelized, add minced garlic and cook for an additional minute until fragrant.

  5. Unite the Pasta and Sauce: Add drained pasta to the skillet, tossing it in the creamy onion mixture. Stir in grated Parmesan cheese until melted and incorporated.

Notes

For a lighter version, substitute half of the heavy cream with vegetable broth. For a vegan option, use coconut cream or cashew cream with nutritional yeast instead of cheese.
