- 2 large onions (preferably yellow or Vidalia)
- 3–4 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup freshly grated Parmesan cheese
- Fresh herbs (thyme, parsley, or rosemary)
Instructions
- Cook Your Pasta: Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve a cup of pasta water before draining.
- Caramelize Your Onions: In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add sliced onions and cook, stirring occasionally, for about 20-30 minutes until golden brown and sweet.
- Add Garlic: Once onions are caramelized, add minced garlic and cook for an additional minute until fragrant.
- Creamy Mixture: Lower heat and add heavy cream, stirring well. Gradually add reserved pasta water to thin the sauce if needed.
- Unite the Pasta and Sauce: Add drained pasta to the skillet, tossing it in the creamy onion mixture. Stir in grated Parmesan cheese until melted and incorporated.
- Season and Serve: Finish with fresh herbs, salt, and pepper. Serve immediately with extra cheese on top if desired.
Notes
For a lighter version, substitute half of the heavy cream with vegetable broth. For a vegan option, use coconut cream or cashew cream with nutritional yeast instead of cheese.
