Description
Deliciously crispy on the outside and buttery soft on the inside, these smashed potatoes are seasoned with garlic and fresh herbs for the perfect side dish.

- 2 lbs Yukon Gold or red potatoes
- 4 cloves fresh garlic, minced
- ¼ cup olive oil or melted butter
- 2 tbsp fresh rosemary, thyme, or parsley
- Salt and black pepper, to taste
- Optional: Parmesan cheese, chives, or paprika for garnish
Instructions
- Preheat your oven to 450°F (232°C).
- Wash and peel the potatoes as desired. Cut them into chunks and place them in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain the potatoes and allow them to cool just enough to handle.
- On a baking sheet lined with parchment paper, arrange the potatoes in a single layer. Smash each potato gently until about ½ inch thick.
- Drizzle with olive oil or melted butter, and sprinkle with minced garlic, herbs, salt, and pepper.
- Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Serve hot, garnished with more fresh herbs and cheese if desired.
Notes
For a dairy-free option, use olive oil instead of butter. You can also use dried herbs if fresh ones are not available.
