Description

Deliciously crispy on the outside and buttery soft on the inside, these smashed potatoes are seasoned with garlic and fresh herbs for the perfect side dish.


Ingredients

  • 2 lbs Yukon Gold or red potatoes
  • 4 cloves fresh garlic, minced
  • ¼ cup olive oil or melted butter
  • 2 tbsp fresh rosemary, thyme, or parsley
  • Salt and black pepper, to taste
  • Optional: Parmesan cheese, chives, or paprika for garnish

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Wash and peel the potatoes as desired. Cut them into chunks and place them in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  3. Drain the potatoes and allow them to cool just enough to handle.
  4. On a baking sheet lined with parchment paper, arrange the potatoes in a single layer. Smash each potato gently until about ½ inch thick.
  5. Drizzle with olive oil or melted butter, and sprinkle with minced garlic, herbs, salt, and pepper.
  6. Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve hot, garnished with more fresh herbs and cheese if desired.

Notes

For a dairy-free option, use olive oil instead of butter. You can also use dried herbs if fresh ones are not available.
