Ingredients

- 2 1/4 cups whole wheat flour
- 1/2 cup pure pumpkin puree
- 1/4 cup honey or maple syrup
- 1/4 cup Greek yogurt
- 1 tsp active dry yeast
- 1/2 cup warm water
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/4 cup brown sugar (for filling)
Instructions
- In a small bowl, combine warm water, a teaspoon of sugar, and yeast. Allow it to sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine whole wheat flour, a pinch of salt, cinnamon, nutmeg, and pumpkin puree. Add the activated yeast mixture and honey. Lastly, mix in Greek yogurt until a dough forms.
- Lightly flour your surface and knead the dough for about 5-7 minutes or until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
- Mix brown sugar, cinnamon, and a pinch of salt for the filling.
- After the dough has risen, punch it down gently and roll it out on a floured surface into a rectangle, about 1/4 inch thick.
- Spread a thin layer of Greek yogurt over the dough before sprinkling the filling mixture evenly. Roll the dough tightly from the long edge, pinching the seams to seal.
- Cut the rolled dough into 1-inch slices and place them in a greased baking dish.
- Cover the rolls with a cloth and let them rise for another 30 minutes.
- Preheat your oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
- If desired, mix powdered sugar with a splash of milk to create a light glaze for drizzling over the warm rolls.
Notes
Use gluten-free flour for a gluten-free option. Replace honey with agave syrup for a vegan option.
