- 1 bell pepper, diced (red or green)

- Salt and pepper to taste
- Dried oregano, thyme, or rosemary for extra flavor
Instructions
- Prep your ingredients: wash and dice the potatoes and chop the onion and bell pepper.
- Sauté the vegetables: in a large skillet, heat 2 tablespoons of olive oil or butter over medium-high heat. Add onions and bell peppers, sautéing until translucent (3-5 minutes).
- Brown the ground beef: push vegetables to the side and add ground beef, cooking until browned, breaking apart with a spatula. Drain excess fat if desired.
- Add garlic: stir in minced garlic for about a minute.
- Incorporate potatoes: add diced potatoes with salt, pepper, and herbs. Stir together and cover the skillet.
- Cook until tender: reduce heat to medium and cook for 20-25 minutes, stirring occasionally.
- Finishing touches: turn off heat when potatoes are cooked through and let sit covered for a few minutes to meld flavors.
- Optional: add a splash of Worcestershire sauce or sprinkle grated cheese on top before serving.
Notes
For added flavor, consider using sweet potatoes or adding greens like kale or spinach. Serve with a fresh side salad for balance.
