- 12 cups popped popcorn (fresh)
- 1 cup mini marshmallows
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 cup rainbow sprinkles
- A pinch of salt
Instructions
- Pop your popcorn using an air popper or stovetop. Drizzle with melted butter.
- In a saucepan over medium heat, melt butter, sugar, corn syrup, and salt. Stir until combined and bring to a gentle boil. Boil for 2 minutes until light golden.
- Remove from heat and stir in vanilla and mini marshmallows until melted.
- Pour the mixture over the popcorn and mix gently. Add sprinkles towards the end.
- Transfer mixture to a parchment-lined baking sheet and press down to form a solid sheet.
- Let cool at room temperature, then break into bite-sized pieces and enjoy!
