- 1 cup pure pumpkin puree
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
Instructions
- Preheat oven to 375°F (190°C) and grease madeleine pan.
- Melt butter in a small saucepan over low heat; let cool slightly.
- In a medium bowl, whisk together flour, baking powder, spices, and salt.
- In a large bowl, beat eggs and sugar until pale and fluffy. Stir in pumpkin puree and melted butter.
- Gradually fold dry ingredients into wet mixture, careful not to overmix.
- Fill each cavity of the madeleine pan with batter, about a teaspoon per shell.
- Bake for 10-12 minutes until lightly golden and centers spring back.
- Let cool in pan for a few minutes, then transfer to a wire rack and dust with powdered sugar.
Notes
Allow batter to rest for 30 minutes before baking for better texture.
