Instructions
- Marinate the Chicken: Combine balsamic vinegar, honey, minced garlic, and chopped rosemary in a bowl. Add the chicken, ensuring it is well-coated. Marinate for at least 30 minutes or overnight for deeper flavor.
- Prep the Pan: Heat olive oil in a skillet over medium-high heat until hot.
- Sear the Chicken: Remove excess marinade, place chicken in the skillet, and sear until golden brown on both sides (about 5-7 minutes each side).
- Add Vegetables: Push chicken aside, add chopped vegetables, and sauté until tender and caramelized (about 5-10 minutes).
- Deglaze: Pour in the remaining marinade, scraping up any bits stuck to the bottom of the pan.
- Simmer and Serve: Cover and simmer for an additional 10-15 minutes, or until chicken is cooked through. Serve warm.
