Ingredients
Scale
- 1 cup pumpkin puree
- 3 large eggs
- 1 cup milk
- 6 slices of bread (brioche, challah, or whole grain)
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the pumpkin puree, eggs, milk, sugar, cinnamon, nutmeg, and vanilla extract until well blended and creamy.
- Heat a large skillet over medium heat. Dip each slice of bread into the pumpkin mixture, letting it soak briefly on each side.
- Add a touch of butter to the skillet and place the soaked bread slices in the skillet, cooking for 3-4 minutes per side until golden brown and crispy.
- Transfer the cooked French toast to a plate and top with maple syrup, whipped cream, or sautéed apples before serving warm.
Notes
For a vegan version, substitute flax eggs for eggs and use coconut milk instead of dairy milk. Enjoy with toppings like fresh fruits or nuts.
